Ingredients
  

  • 1 Banana mashed
  • 1 Large Egg
  • 3 tbsp Melted coconut oil or Butter
  • cup Brown sugar plus more for topping
  • ½ tsp Vanilla extract
  • ¾ cup All-purpose flour
  • ¼ tsp Baking soda
  • ½ tsp Baking powder
  • ¼ tsp Salt
  • ½ tsp Cinnamon
  • ¼ tsp Nutmeg
  • ¼ cup Chocolate chips
  • 2 tbsp Unsweetened coconut flakes
  • 1-2 tbsp Heavy cream for topping before baking

Equipment

  • 1 Mixing bowl
  • 1 Rubber spatula or wooden spoon
  • 1 Fork mashing banana
  • Measuring cups & spoons
  • Small loaf pan or round baking pan

Method
 

  1. Preheat oven to 350°F (175°C) and grease a small loaf or round pan.
  2. In a bowl, mash the banana with a fork until smooth.
  3. Whisk in the egg, melted coconut oil, brown sugar, and vanilla until combined.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon and nutmeg.
  5. Gently fold until just combined. Do not overmix.
  6. Stir in chocolate chips and coconut flakes.
  7. Pour batter into the greased pan. Smooth the top.
  8. Drizzle heavy cream over top of the batter. Sprinkle the top generously with brown sugar and a light dusting of cinnamon.
  9. Bake for 35-40 minutes, or until golden brown and a toothpick comes out clean.
  10. Let cool 10-15 minutes before slicing.

Notes

  • Ripe bananas work best: The darker the peel, the sweeter and softer your loaf will be.
  • Don’t over-mix: Gently fold the dry ingredients into the wet to keep the bread soft and tender.
  • Storage: Keep covered at room temperature up to 2 days, or refrigerate up to 5. Warm slices in the toaster or oven before serving.
  • Freezer-friendly: Wrap individual slices and freeze for up to 2 months.
