The other day, I was working in the kitchen with my toddler when he grabbed a banana and smashed it up on the counter. Instead of getting upset, I decided to turn the moment around. I told him, “Okay, you’re making something with it!” and pulled up a simple recipe for banana bread that only uses one banana.

From there, he became my little chef. He measured the ingredients, did all the mixing (except for the final folding and pouring into the pan), prepped the pan with oil, and proudly sprinkled the brown sugar topping at the end. Watching him focus and enjoy the process made me feel so proud, not just of him but of myself too. It was one of those happy mom moments where you see growth in both your child and yourself.

Ingredients
  

  • 1 Banana mashed
  • 1 Large Egg
  • 3 tbsp Melted coconut oil or Butter
  • cup Brown sugar plus more for topping
  • ½ tsp Vanilla extract
  • ¾ cup All-purpose flour
  • ¼ tsp Baking soda
  • ½ tsp Baking powder
  • ¼ tsp Salt
  • ½ tsp Cinnamon
  • ¼ tsp Nutmeg
  • ¼ cup Chocolate chips
  • 2 tbsp Unsweetened coconut flakes
  • 1-2 tbsp Heavy cream for topping before baking

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and grease a small loaf or round pan.
  2. In a bowl, mash the banana with a fork until smooth.
  3. Whisk in the egg, melted coconut oil, brown sugar, and vanilla until combined.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon and nutmeg.
  5. Gently fold until just combined. Do not overmix.
  6. Stir in chocolate chips and coconut flakes.
  7. Pour batter into the greased pan. Smooth the top.
  8. Drizzle heavy cream over top of the batter. Sprinkle the top generously with brown sugar and a light dusting of cinnamon.
  9. Bake for 35-40 minutes, or until golden brown and a toothpick comes out clean.
  10. Let cool 10-15 minutes before slicing.

Notes

  • Ripe bananas work best: The darker the peel, the sweeter and softer your loaf will be.
  • Don’t over-mix: Gently fold the dry ingredients into the wet to keep the bread soft and tender.
